Sorpotel is synonymous with Goa, made originally from using all the parts of pork has Portuguese origin.
The meat and organs are first parboiled, then diced and sautéed, later cooked in a spicy and tangy masala. No weddings and specials occasions are complete without Sorpotel.
For 1.5kg Sopotel: Meat, fat, Heart and Liver.
Parboil the meat, fat and organs with 1tbsp Salt.
Reserved the stock after boiling the meat.
Dice into cubes of 5-7mm
Sorpotel Masala:
20 Kashmiri chillies
1 Tsp Cumin seeds
4 1" pieces Cinnamon stick
1/2 Tbsp Black peppercorns
1/2 Tbsp Cloves
1/2 tsp Turmeric powder
2" piece Ginger
5-6 Cloves of Garlic
Grind to a fine paste with little water
Extract the pulp of a lemon sized ball of tamarind soaked in half a cup of warm water.
For Meat Preparation:
2 Tbsp Oil
2 medium sized Onions chopped
2 Green chillies slit
100 ml Goan toddy Vinegar
Salt to taste
