Roselle is a popularly cultivated food crop in Meghalaya, the plant is locally known as Galda in Garo and as Jajew in Khasi, both the sepals from the seed pods of the plant and the leaves are used in local cuisine, cooked with both dried and fresh fish.
This is a very simple recipe of fish flavored with Roselle sepals, which is commonly prepared at home.
Roselle is rich in Calcium, Poly-phenol, Iron and in antioxidants and is a super food rich in micro-nutrients.
