Ceviche is a classic raw seafood dish with veggies. Of course I had to create a vegan version that was just as amazing. You’ll need simple ingredients and some hearts of palm. Hearts of palm is my go to for seafood replacements because they resemble the texture of fish, crab and lobster meat.
Ingredients:
1 diced zucchini
1 half red onion diced
1 jalapeño diced and seeds taken out
12 sweet mini peppers diced, red, yellow and orange
1 can of hearts of palm tips, or whole but just dice them yourself
1 half lemon
1 half lime
Pink salt to taste
2 tbs paprika
1 diced avocado
Mix well. Let this sit for 30 mins-1 hr, the longer the better
