Recipe:
Yield: 30 cookies
Ingredients:
4 eggs
455 grams powdered sugar
1 tbsp grated lemon rind
4 1/2 cups sifted flour
1 tsp baking powder
*Anise seeds or extract
Instructions:
1) Beat eggs until light.
2) Stir in sugar and beat well.
3) If using extract add 1 tsp.
4) Add rind and flour sifted with baking powder. Mix well.
5) Chill 1 hr.
6) Roll pin firmly through dough. Press cookies using a cookie mold (flour mold before each press).
7) Cut cookies apart and arrange on greased sheet. Expose to air overnight.
8) Bake 180C /350F for 20 min.**
*Vanilla or other flavors may be used instead of anise.
** Cookies are done when the bottoms are a light golden brown. When baking these cookies for the first time, bake just a few on the first baking sheet and check often to see how long your cookies take to finish. Everyone’s oven is different.
