Although I love lemony desserts, I wasn’t big on key lime pie. But I loooved this one. You feel the lime shine through but you also get the sweetness and creaminess that balances it out. Also, a major plus is that it’s relatively easy to make.
Key Lime Pie recipe:
2 cans sweetened condensed milk
1/4 cup cream cheese, room temperature
1/4 cup sour cream, room temperature
2 egg yolks
3/4 cup key lime juice
1 tsp key lime zest
10” pie crust
2 cups sweetened whipped cream
Mix the condensed milk, cream cheese, and sour cream in a bowl until smooth. Mix in the egg yolks with a whisk. Add the lime juice and zest. Mix again until very smooth.
Pour the mixture into a pre-baked pie shell. Bake on 325F (preheated) for about 17 minutes. It’s ready to come out of the oven when the pie will still jiggle a bit when you shake it lightly but it will all stay and move together as one. It’s supposed to jiggle a bit so don’t worry! Put it in the fridge for at least 3 hours.
When it’s out, add the whipped cream on top. I’m a firm believer in whipped cream in every bite!
Decorate with lime zest if you wish. Enjoy cold!!
