This is the first of a number of "steps" we take to thresh and winnow our dried beans. There have been many ways we've tried over the years and this is the easiest way we've found. After we've given the beans a good stomping, we'll pick out the obvious empty shells and then stomp again. Then we'll gather all the shells into buckets and shell the beans still remaining in their pod.
There will still be dirt and debris mixed in with the beans. We'll winnow on a breezy day pouring the contents between a couple of buckets or use a fan as a breeze source. That removes most of the debris. Then a final sort to remove any moldy or inferior beans. The final step is to store the beans in air tight containers, label variety and year and we have the makings of some wonderful winter meals.
