Banh bo the Vietnamese steamed Rice Cake are small colorful, spongy rice flour cake that have a light and airy texture. The cakes in this video are colored and flavored naturally with pandan juice.

▶️Ingredients:
1) 150g Steamed Long Rice
2) 100ml Water for grinding the rice
3) 165ml Coconut Milk: [ Ссылка ]
4) 120g Sugar: [ Ссылка ]
5)150g Rice Starch
6) 70 ml Pandan Juice
8) 1 Tsp Instant Yeast: [ Ссылка ]
9) 1/2 Tsp Coconut Oil: [ Ссылка ]
10) 1/4 Tsp Baking Soda: [ Ссылка ]
11) 1/2 Tbsp Lime Juice
▶️Cooking method
1) Add steamed basmati rice and water in a blender. Make a fine paste.
2) After each 30 second stop the motor, scrape down the sides and grind. Repeat the process about 2,3 times.
3) Measure out 165ml coconut milk, first add half of the coconut milk then grind.( Add too much of coconut milk at the same time as the rice cannot be well ground )
4) Grinding 2,3 times maximum of 30 seconds for each time.
5) Then add remaining coconut milk and continue the process.
6) Add sugar and continue grinding.
7) Take a clean bowl and pour the mixtue. The mixture should be smooth, clear, soft and runny mixture.
8) To this mixture add rice starch / rice flour.
9) Stir well until the rice starch thoroughly combined.
10) Pour pandan juice gradually into the mixture and mix well. To make pandan juice take 40g of pandan leaves and 100ml of water.
11) Make sure that the batter is thick and enough to fall into a ribbon like texture.If the batter is too thin the cakes will not rise properly.
12)Next add 1 Tsp instant yeast. Stir the mixture well. NB: stir either clockwise or anticlockwise, only choose one direction till the end.
13) Cover it and ferment for 60 minutes.
14) After 60 minutes, using a spatula to check the batter, if the batter has many air bubbles it means the batter rising well.
15) Stir the batter, then add coconut oil. It gives great aroma to our cake.
16) stir the batter well. Cover and rest for 20 minutes.
17) Meanwhile take out cup cake moulds and greese it with coconut oil.
18) After 20 minutes add baking soda and to pour lime juice right on baking soda.
19) You can observe a bubbling there, this will helps the cakes to have a fluffy and soft texture.
20) Transfer the batter into the moulds.
21)Then steam the cake for 15-17 minutes.
