The end of Day 1 of our 4 day trek to the Sunshine Coast and Vancouver Island brings us to the beautiful Ruby Lake resort for an amazing dinner and view of the lake. After a long, hot [35c] day of driving it finally started to cool off in time for an early dinner and some flying over the lake.

The Ruby Lake restaurant and resort has been in Cogrossi family for over 30 years. Chef Aldo feeds his own chickens, the restaurant relies heavily on local producers for its menu. I have been meaning to visit for years and finally made it happen and shared with the lovely Demze.
