Another fantastic vegetable from the Apiaceae (carrot) family brought to you by Christopher Hope from www.wildplantguide.co.uk. The stems of this plant are gorgeous, tasting somewhat like carrot with a hint of parsley. Simply peel off the outer skin and eat raw. Note the lack of red spots on the stems and the hairs which set this apart from the deadly poisonous Conium maculatum, which grows abundantly in Britain. Many members of this family produce furanocoumarins, substances that are photo toxic. So if the sap gets on your skin under sunlight, dermatological problems may occur in some individuals.This is more important with hogweed (previously covered), yet can occur in some 20 or so umbellifers known to grow in Britain, including this plant, and garden vegetables such as parsnips, celery and parsley!
