Pizza Sprouts
For Sprouts:
1. In a bowl, soak 150g green moong for 12-16 hours.
2. Once soaked, transfer to a soft damp cloth and wrap from all sides.
3. Keep it outside for another 16-18 hours until sprouts are ready.
4. Boil the sprouts for 3-4 minutes.
For Pizza Sprouts:
1. In a pan, heat 1/2 tbsp olive oil.
2. Add 2 tsp dried oregano, 2 tsp red chili flakes, 6-7 chopped garlic cloves, and 3 medium-sized chopped onions. Sauté until translucent.
3. Add 1/2 green sliced capsicum, 3-4 medium-sized chopped tomatoes, 1 tsp mixed herbs, 1 tsp paprika powder, a handful of basil leaves, 1 tbsp tomato paste, and 1/4 cup water.
4. Add the sprouts, 1 1/2 cups boiled sweet corn, 1/4 cup black olives, salt to taste, and 2 tsp jaggery powder. Mix well.
5. Finish with Parmesan cheese shavings and 2 tbsp crumbled goat cheese or feta cheese.
Plating:
1. Serve warm on a plate with a garnish of Parmesan cheese and basil leaves.
