To make this you will need:
1 head of cauliflower
for the flour mixture:
2-3tbsp (15-20gr) all purpose flour
1tsp salt
1/2tsp pepper
for the wet batter:
125gr all purpose flour
60gr cornstarch
1tsp onion powder
1tsp garlic powder
1tsp paprika powder
1/2tsp cayenne pepper
1tsp oregano
1tsp cumin
350ml soy milk
oil to fry in
Start by cutting your cauliflower into florets that are all roughly the same size. Then cook them in salted water for 3-4 minutes. This is going to cook them halfway through, not completely, which is exactly what we want since we are going to fry them later on.
While the cauliflower is cooking, prepare the flour mixture and the wet batter.
Heat up the oil to 180C (350F). If you don't own a thermometer you can test if the oil is hot enough by sticking a wooden spoon in the oil and if bubbles start to form around it, the oil is hot enough and you can start frying!
Once the cauliflower is cooked (and cooled down a bit so you can hold the florets easily), toss them in the flour mixture first, then dip in the wet batter and then fry them in the hot oil! Fry them for about 5 minutes until golden brown and crispy. I fried mine in different batches to not overcrowd the pan too much.
Once the cauliflower is done frying, carefully take the florets out of the oil and let them leak out on a kitchen paper towel.
And that's it! Serve as a side dish or just snack on them (they are great to dip in you fav dipping sauce!).
