Potato Samosa Rolls
Recipe in English:
Ingredients:
Prepare Potato Filling:
-Cooking oil 2 tbs
-Lehsan (Garlic) finely chopped 2 tbs
-Adrak (Ginger) finely chopped 1 tbs
-Hari mirch (Green chilli) chopped 2
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldee powder (Turmeric powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Aloo (Potatoes) boiled 500g
-Chaat masala 1 tsp
-Namak (Salt) 1 tsp or to taste
-Pyaz (Onion) chopped 1 medium
-Hara dhania (Fresh coriander) chopped 1 tbs
-Podina (Mint leaves) chopped 1 & ½ tbs
Prepare Dough:
-Ghee 2 tbs
-Warm water ½ Cup
-Maida (All-purpose flour) 1 & ½ Cup
-Namak (Salt) ½ tsp or to taste
-Zeera (Cumin seeds) 1 tsp
-Water ¼ Cup or as required
-Maida (All-purpose flour) 2 & ½ tbs
-Water ¼ Cup or as required
-Cooking oil for frying
Directions:
Prepare Potato Filling:
-In a small frying pan,add cooking oil,garlic,ginger,green chillies and mix well.
-Add red chilli powder,turmeric powder,cumin seeds,red chilli crushed and mix well,cook for 1-2 minutes.
-Let it cool.
-In a bowl,grate potatoes with the help of the grater,prepared spice mix,chaat masala,salt,onion,fresh coriander,mint leaves,mix well & set aside.
Prepare Dough:
-In a bowl,add ghee,warm water and mix well.
-Add all-purpose flour,salt,cumin seeds and mix well.
-Gradually add water and knead until medium soft dough is formed,cover & let it rest for 15 minutes.
-Grease hands with oil and knead dough again until smooth.
-Take a small dough,sprinkle dry flour and roll out with the help of rolling pin.
-Cut into rectangle shape with the help of the knife and remove the extra sides then divide the rectangle into 3 strips.
-Take one strip,add prepared potato filling and roll out the strip.
-Apply water at one end of the strip and seal the end (makes 12-14).
-In a bowl,add all-purpose flour,water and mix well to make flour slurry.
-Now dip both ends (one by one) of prepared samosa rolls in flour slurry.
-In a wok,heat cooking oil and fry potato samosa roll on low flame until golden.
-Serve with tomato ketchup or green chutney!

-Chotya frying pan mein cooking oil,lehsan,adrak aur hari mirchein dal ker ache tarhan mix ker lein.
-Lal mirch powder,haldee powder,zeera aur lal mirch crushed dal ker ache tarhan mix karein aur 1-2 mintes kliya paka lein.
-Thanda ker lein.
-Bowl main grater ki madad sa aloo ko grate ker lein,tayyar spice mix,chaat masala,namak,pyaz,hara dhania aur podina dal ker ache tarhan mix ker lein & side per rakh dein.
Prepare Dough:
-Bowl mein ghee aur neem garam pani dal ker ache tarhan mix ker lein.
-Maida,namak aur zeera dal ker ache tarhan mix karein.
-Thora thora ker ka pani shamil karein aur ghond ker medium soft dough tayyar ker lein,dhak ker 15 minutes kliya rakh dein.
-Haathon ko oil sa grease karein aur dough ko smooth hunay tak dubara ghond lein.
-Chota dough lein aur maida chirak ker rolling pin ki madad sa bail lein.
-Rectangular shape mein knife ki madad sa cut ker lein,extra sides ko remove ker lein phir rectangular ko 3 strips mein divide ker lein.
-Ek strip lein aur tayyar aloo filling rakh strip ko roll ker lein.
-Strip ki ek side per pani laga lein aur end ko seal ker lein (makes 12-14).
-Bowl mein maida aur pani dal dein aur ache tarhan mix ker ka flour slurry tayyar ker lein.
-Ab tayyar samosa rolls ka ends ko flour slurry mein dip ker lein.
-Karahi mein cooking oil garam karein aur potato samosa rolls ko halki ancch per golden hunay tak fry ker lein.
-Tomato ketchup or hari chutney ka saath serve karein!
