Take a colander or strainer rinse the palak (spinach) leaves
Water पानी - 1 Litre
Restaurants/Dhaba Style -TIPS
Sugar/Shakkar/Chini-शक्कर-चीनी- 1 tsp
Let the spinach leaves in the water 2 min
Add some icecubes to water to get cold water.
strain the spinach leaves.
Immediately transfer the palak spinach leaves to the bowl
This method of “shocking”
the spinach helps preserve the vibrant green color
Allow the spinach leaves to stay in the cold water
Drain the ice cold water
Add the spinach in a grinder jar
Coriander हरा धनिया
Green Chili हरी मिर्च (Hari Mirch)-2
Grind in a Mixer
Make a smooth spinach puree
Pure Ghee देसी घी - 1 tbsp
Oil आयल - 1 tbsp
Bay Leaf तेज पत्ता (Tej Patta)-1
Dry Red Chili लाल मिर्च (Lal Mirch)-2
Cinnamon Stick दालचीनी (Dalchini)
Clove लौंग -2
Cumin seeds जीरा (Jeera)
let them splutter
Chopped Garlic कटी हुई लहसुन
Chopped Green Chili कटी हुई हरी मिर्च
Chopped Ginger कटी हुई अदरक
Saute till the raw aroma of garlic goes away
Saute until the onions become golden.
Choppedn Onion बारीक़ कटा प्याज़
Saute until the onions become translucent
Chopped Tomato बारीक़ कटा टमाटर
Salt as per Taste स्वादानुसार नमक
Stir and saute the tomatoes until they soften
tomatoes are softened
you see fat releasing from the sides of the mixture
Mix very wel
Turmeric Powder हल्दी पाउडर (Haldi Powder) 1/4 tsp
Coriander Powder धनिया पाउडर (Dhaniya Powder) 1 tsp
Cumin Powder जीरा पाउडर - 1/2tsp
Red Chili Powder लाल मिर्च पाउडर - 1 tsp
Crush and mix Kasoori Methi कसूरी मेथी
Cook until Oil releasing from the sides of the gravy
succulent paneer cubes (Indian cottage cheese) -250gm
Butter मक्खन
add the paneer cubes into the gravy.
Garam Masala गरम मसाला-1/2 tsp
Chopped Garlic कटी हुई लहसुन 1/2 tsp
Pinch Cumin seeds जीरा (Jeera)
Red Chili लाल मिर्च (Lal Mirch)-2
Kashmiri Red Chili Powder कश्मीरी लाल मिर्च पाउडर -1/2 tsp
Preparation time : -- 15 minutes
Cooking time : -- 15 minutes
Servings : 4 to 6
