Tawa Fry Kaleji Recipe in English:

Ingredients:
1 kg Mutton liver
1 tsp Ginger garlic
1 tbsp Lemon juice
2 tbsp Oil
1 cup Onion (chopped)
1 tbsp Garlic (chopped)
1 tbsp Ginger (chopped)
1/2 tsp Turmeric
1 tsp Red chili flakes
1/2 tbsp Coriander (crushed)
1/2 tbsp Cumin (crushed)
Salt to taste
1 tsp Garam Masala
1 cup Coriander fresh
1/2 cup Tomatoes (chopped)
Ginger slices for garnish
Green chilies for garnish
Coal for smoke

Ingredients for marination:
1 cup Yogurt
1/2 tbsp Coriander (crushed)
1/2 tbsp Cumin (crushed)
1/2 tbsp Red chili flakes
1 tbsp Garlic (chopped)
1 tbsp Green chilies (chopped)

Directions for Kaleji Fry:
In a bowl of water mix lemon juice, ginger garlic paste and soak mutton liver in it for 10 to 15 minutes.
Drain out water and cut small cubes of mutton liver.
In a bowl mix yogurt, coriander, cumin, red chili flakes, garlic, green chilies and marinate liver cubes for 30 minutes in it.
In a flat pan heat oil, cook onion until translucent, then add ginger, garlic and cook a bit.
Add turmeric, red chili flakes, coriander, cumin, salt and cook for 2 to 3 minutes.
Then add marinated liver cubes in it and cook for 15 to 20 minutes.
Then add coriander, tomatoes, garam masala and cook for 4 to 5 minutes.
Heat coal and smoke your dish for 2 to 3 minutes.
Garnish with coriander, green chilies and ginger.
your Kaleji Fry is now ready to serve/

کلیجی بھگونے کے اجزاء:
ادرک لہسن پیسٹ 2چائے کے چمچ
لیمو کا رس 1کھانے کا چمچ
پانی حسبِ ضرورت
میرینیشن کے اجزاء:
دہی 1اور آدھا کپ
دھنیا پاؤڈر آدھا کھانے کا چمچ
ذیرہ پاؤڈر آدھا کھانے کا چمچ
کٹی لا ل مرچ 1چائے کا چمچ
لہسن 1کھانے کا چمچ
سبز مرچیں 2-3عدد
اجزاء:
مٹن کلیجی 1کلو
ادرک لہسن پیسٹ 1چائے کا چمچ
لیمو ں کا رس 1کھانے کا چمچ
کھانے کا تیل 2کھانے کے چمچ
چوپڈ پیاز 1کپ
چوپڈ ادرک 1کھانے کا چمچ
چوپڈ لہسن 1کھانے کا چمچ
ہلدی آدھا چائے کا چمچ
کٹی لال مرچ آدھا کھانے کا چمچ
ٍکٹا ہوا دھنیا آدھا کھانے کا چمچ
کٹا ہوا ذیرہ آدھا کھانے کا چمچ
نمک حسبِ ذائقہ
گرم مصالحہ آدھا چائے کا چمچ
تازہ دھنیا آدھا کپ
چوپڈ ٹماٹر آدھا کپ
ادرک سلائس گارنش کے لئے
سبز مرچیں گارنش کے لئے
کوئلہ دھویں کے لئے
ترکیب:
ایک باؤل میں پانی، لیموں کا رس، ادرک لہسن پیسٹ اور بھگوئی ہوئی مٹن کلیجی ڈال کر دس سے پندرہ منٹ کے لئے اچھی طرح مکس کریں اور پانی نکال کر مٹن کلیجی کو ٹکڑوں میں کاٹ لیں۔
اب ایک باؤل میں دہی، دھنیا، ذیرہ، کٹی لا ل مرچ، لہسن، سبز مرچیں اور مٹن کلیجی ڈال کر تیس منٹ تک میرینیٹ کر لیں۔
پھر ایک پین میں کھانے کا تیل گرم کر کے اس میں پیاز اور ادرک لہسن پیسٹ ڈال کر تھوڑا سا پکا لیں۔
اب اس میں ہلدی، کٹی لال مرچ، دھنیا، ذیرہ اور نمک ڈال کر دو سے تین منٹ پکائیں۔
پھر اس میں میرینیٹ کی ہوئی کلیجی ڈالیں اور دس سے پندرہ منٹ کے لئے پکائیں۔
اب اس میں دھنیا، ٹماٹر اور گرم مصالحہ ڈال کر چار سے پانچ منٹ کے لئے پکائیں۔
پھر کوئلے سے اپنی ڈِش کو دو سے تین منٹ کے لئے دھواں دیں۔
دھنیا، سبز مرچوں اور ادرک کے ساتھ گارنش کر کے سرو کریں۔
