Dahi Waly Baingan
Ingredients for Preparation of Dahi Walay Baingan
Baingan Slices as per required
Oil for frying ½ cup
Ingredients for Preparation of Masala:
Oil 1/4 cup
Chopped onion 1 cup
Chopped Garlic 1 Tbsp
Tomato Puree 1/2 Cup
Red Chilli Powder 1 Tbsp
Cumin Powder 1 Tsp
Coriander Powder 1 Tbsp
Turmeric 1/2 tsp
Red Chilli Flakes 1 Tbsp
Salt 1 tsp
Water 1 cup
Ingredients for Preparation of Yogurt Mixture:
Yogurt (Nestle) 3 cups
Oil 1/2 cup
Cumin Seeds 1 Tbsp
Curry Leaves 8-10
Red Chilli (Whole) 7-8
Directions:
1. In a pan add oil, add slices of baingan, and shallow fry both sides for 1-2 minutes.
2. In a pan add oil then add onions and saute for a minute. add chopped garlic, and saute it for a minute.
3. Then add tomato puree and red chili powder, cumin powder, coriander powder, turmeric, red chili flakes, and salt and cook for 1-2 minutes. Add a cup of water in it and cook until the oil separates.
4. In a pan add oil and cumin seeds, curry leaves, and red chilies (whole) and cook until they sizzle. Now add yogurt to it.
5. In a bowl add prepared masala, fried baingan, prepared yogurt mixture, again fried baingan, prepared masala, and prepared yogurt.
6. Garnish it with green coriander, red chili flakes, and cumin seeds and serve with boiled rice.
