Ingredients
- 3.5 cups flour (plus more for dusting)
- 1 tsp salt
- 120ml warm milk
- 220ml warm water
- 1 small chopped onion
- 1 tsp chilli flakes
- 140g chopped spinach
- ½ tsp pepper
- 200g feta cheese
- 2 tbsp cooking oil
Method
1. Prepare your dough by mixing flour, salt, warm milk and water in a stand mixer with the hook catchment for 9 minutes or until smooth.
2. Rest dough for 15 minutes.
3. Add oil to a heavy based pan and sweat your onion with salt and pepper until translucent. Add your spinach and cook until dry. Take the mixture out of the pan and let it cool before adding your crumbled feta and chilli flakes.
4. Cut the dough into 6 pieces and roll each piece out as thin as you can go.
5. Drizzle olive oil on the dough and spread it out so it completely covers one side.
6. Fold two of the sides of the circle in, making a long rectangle shape.
7. Place 1/6 of your spinach and feta mixture in the centre, leaving a gap at the top and bottom.
8. Fold top and bottom, making sure the seam in the centre overlaps.
9. In a non-stick pan or well-seasoned cast iron skillet over a medium heat, cook the gozleme with a small amount of olive oil until golden brown on both sides.
