"LAZY GIRL" CHICKEN BREASTS✨ use this foolproof technique for tender and juicy chicken breasts every time! Whenever a recipe calls for cooked chicken breasts, 90% of the time this is how I'm going to prepare it. You guys loved my "Lazy Girl Chicken Thighs" and I know there are a lot of chicken breast lovers who are looking for a higher protein and lower calorie option than chicken thighs - this recipe is for YOU!
Ingredients:
1 1/2 lbs of chicken breasts, boneless and skinless (I look for 1 inch thick breasts)
salt and pepper to season (about 1/4 tsp salt per breast, and 1/8 tsp pepper)
2 tbsp avocado oil
about 1/2 cup of broth
Directions:
Pat your chicken dry and season generously on both sides with salt and pepper
Heat avocado oil in a large stainless steel or cast iron skillet over medium high heat
Add your chicken breasts to the skillet, making sure not to overcrowd the pan, and cook, undisturbed, for 7 minutes (Its important not to move them around while cooking because you want a nice golden crust to form)
Flip the chicken once it can easily release from the pan and cook for another 5-7 minutes (see note)
Lower the pan heat to medium and add 1/4 cup of chicken broth, scraping up any chicken bits as the broth deglazes the pan, then add another 1/4 cup to cover the bottom on the pan
Allow the sauce to reduce until there is only a thin glaze over the bottom of the pan, tossing the chicken in the sauce as you go, for another 3-5 minutes
Remove the chicken from the skillet and allow to rest for 5 minutes before slicing
Slice into your juicy chicken breasts, serve (with the pan drippings), and ENJOY!
Note: This cook time is for chicken breasts that are approximately 1 inch thick. A thicker chicken breast bay need more time. If you have a meat thermometer you should cook your chicken until the internal temperature reads 165
