Hey Foodies! Ginisang Ampalaya (Sauteed Bitter Gourd) is a Filipino dish where Ampalaya (Bitter Gourd, Bitter Melon) is stir fried with strips of meat and scambled eggs. Here's my vegan version that doesn't only taste delicious but nutritious as well!

Ingredients:
2 medium size amapalaya (bitter gourd)
2 tbsp olive oil
5 cloves garlic
1 medium red onion
50g cherry tomatoes
30g shiitake mushrooms
100g tofu (season with black salt and nutrional yeast)
1 tbsp vegan patis (fish sauce)
1/4 cup mushroom stock
salt and pepper to taste
