Ingredients:
4 chicken breasts, chopped
2 teaspoons coconut oil
1 onion, chopped
1 red pepper, chopped
1 small pineapple, chopped
3 garlic cloves, grated
2–3 tablespoons yellow curry paste (depending on preference)
1 can coconut milk
1 cup fresh herbs – coriander, spring onion
6 cups rice, cooked for serving
Method:
Season the chicken and place in a #LeCreuset Balti Dish with 1 teaspoon of coconut oil and fry until golden. Remove from the pan and set aside.
In the same pan, fry the onions with the remaining coconut oil until translucent, and then add the red peppers and pineapple and cook for another 3 minutes.
Add the garlic and yellow curry paste, mix it evenly with the vegetables and cook for 4 minutes. Then add the coconut milk and stir well. Allow the curry to simmer for a few minutes before adding the chicken.
Return the chicken to the pan and cook for 5 minutes. Remove from the heat, stir in the fresh herbs, and serve with rice.
