Here's how you make this rich and wholesome Walnut Anjeer Roll at home ☺️
Ingredients:
Soaked Dates - 1/2 Cup
Soaked Figs - 1/2 Cup
California Walnuts - 1/3rd Cup
Poppy Seeds - 2 Tbsps
Ghee - 2 Tsps
Cardamom Pwd - 1/4th Tsp
Process :
* Start by soaking seedless dates & figs in hot water for 30 - 45 mins
* Strain the soaked dry fruits & blend them until they form a paste
* Meanwhile, dry roast some poppy seeds on medium low heat for 2-3 mins - transfer them to a plate & allow it to cool down
* Heat up some ghee in a saucepan & add in the chopped walnuts - roast for 3-4 mins on medium low heat until they’re well roasted - transfer to a plate & allow it to cool down
* In the same nonstick pan, add in the leftover ghee along with the date and fig puree
* Cook the mixture on medium low heat for 7-8 mins until it starts to leave the pan and forms a ball
* To make sure that it’s completely cooked - transfer a small portion to a bowl & spread it out thinly - it should resemble a leather like consistency
* Once the puree has cooked, add in roasted walnuts and half of the poppy seeds - mix it in and take it off the heat
* Transfer the mix to a greased plate & allow it to cool down
* Shape it into a log & wrap in cling wrap or foil - refrigerate the mithai for at least 2 hours
* Slice, Garnish & Enjoy ♥️✨
