I used trimmings from a Boston Butt and from a Pork Belly. The total weight was 3 pounds. The seasoning:
1 Teaspoon Cayenne pepper
1 Tablespoon. Black ground pepper (you can use white pepper too)
1.5 Teaspoon. ground sage
1.5 Tablespoon. Maple Syrup
1.5 Tablespoon. Brown Sugar
1/4 cup Nonfat powdered milk
