Make your own pumpkin puree and fruit leather!
Roast the seeds at the same time. This is a fun recipe that does not require exact amounts of ingredients to come out great! And you don't need a fancy dehydrator. I picked one up at the thrift shop for $10.
Start with a pumpkin known for great flavor:
Baby Pam, Casper (white) Cinderella (Rouge Vif d'Etampes), Fairytale, Flat White Boer(but not a lot of seeds), Hubbard Squash, Jarrahdale, Lakota, Long Island Cheese, Musquee De Provence, Peanut Pumpkin (Galeux d'Eysines), Pie and Sugar Pumpkins
1. Take the seeds out if you'll want to roast those or simply roast the pumpkin whole!
2. Bake in the oven cut side down (if cut at all) for 1.5 hours at 350 F / 177 C.
Remove and let cool.
3. Take your pumpkin out and let it sit in a strainer over a bowl to drain a bunch of the liquid out. Reserve the liquid! It makes great soup!
4. Puree the pumpkin in a food processor or blender.
INGREDIENTS FOR FRUIT LEATHER:
Makes 1 tray of leather.
3/4 cup homemade pumpkin puree
1 teaspoon ground ginger
1/4 teaspoon ground gloves
1/8 teaspoon ground nutmeg
1 teaspoon or more of ground cinnamon
1/4 cup of sweetener
1/4 cup maple syrup
4 ounces of unsweetened apple sauce
5. Mix the puree, spices, sweeteners (if used) and apple sauce well and spread onto your dehydrator trays meant for fruit leather.
6. Dehydrate at 135F / 57 C for 7 hours
Let cool before cutting. Kitchen shears work great.

It's best to freeze pumpkin puree in a hard-side container, or use it fresh within one week.
Only experienced pressure canning techniques should be used on this low acid food.
We'll make a video soon on dehydrating pumpkin into a powder that can be reconstituted later. It keeps up to 5 years! This is awesome because canning pumpkin puree using hot water bath is not recommended and thought to be unsafe.
