Ingredients:
1 lb ground beef
1 medium onion, diced
1 can (14.5 oz) diced tomatoes (undrained)
1 can (8 oz) tomato sauce
1 can (15 oz) black beans, drained
1 can (15 oz) pinto beans, drained
1 can (15 oz) corn, drained
1 packet McCormick taco seasoning
1 tablespoon Uncle Dan’s Classic Ranch Dressing mix
2 jalapeños, sliced (remove all but about 1/6 of the seeds for a subtle kick)
Toppings:
Corn chips
Shredded cheese
Romaine lettuce, chopped
Sour cream
Diced tomatoes
Olives
Avocado
Instructions:
Preheat your Dutch oven over hot coals.
Brown the ground beef in the Dutch oven, breaking it up as it cooks.
Add diced onions, diced tomatoes, tomato sauce, black beans, pinto beans, corn, taco seasoning, ranch mix, and jalapeño slices to the beef. Stir to combine.
Place the lid on the Dutch oven, and add hot coals on top. Simmer for 20 minutes, stirring occasionally, until the flavors meld and the soup is heated through.
Serve hot, topped with corn chips, shredded cheese, romaine lettuce, sour cream, and diced tomatoes—or whatever toppings you love!
