BISON BOLOGNESE
INGREDIENTS:
Meat sauce:
1-1.5 lb grounded Bison or Grounded Beef
2 Carrot, peeled, diced
1 medium Onion, diced
3 stalks Celery, cleaned, diced
1/4 cup Heavy cream
3 tbsp Soy sauce
1 tbsp Worcestershire sauce
3 cloves Garlic, chopped
4 sprigs Thyme
1 can Crushed tomatoes, your choice
1/4 cup Parm cheese
3 tbsp Onion powder
2.5 tsp Garlic powder
1 tsp Crush red peppers
3 tsp Dried basil
3 tsp Dried oregano
1/2 tsp Black pepper
1.5 tsp Dried thyme
2 tsp Dried parsley
1 Bay leaf, optional
1/8 tsp grounded Ginger
2 tbsp Tomato paste
1/3 cup Red wine, optional
1/4 cup Blended oil, your choice oil
DIRECTIONS:
1. Heat oil in a large, heavy bottom saucepan. Add the onion, carrot, celery, thyme and cook over medium low heat, stirring occasionally, until the vegetables are softened but not browned, about 4 minutes. Add garlic cook until the garlic become fragrant. Add the bison, cook over medium low heat until you see no pink, stirring occasionally to break up the meat, about 7 minutes. Turn the heat up to medium high, add red wine stirring occasionally, until the wine is reduced by half. Stir in tomato paste and cook for 1 minute.
2. Add in the crushed tomatoes. You can use all or half depending on how saucy you want your meat sauce. Simmer for 15 minutes. Season with all the dried herbs and spices, soy sauce, Worcestershire sauce and black pepper and bring to a boil over high heat. Reduce heat to low and let the meat sauce simmer for another mins. Discard the bay leaf and thyme. Stir in the heavy cream and parm cheese cook the sauce just unoktil heated through. Serve with your favorite pasta and enjoy.
FOR THE PASTA:
1 lb or 1 box of Linguine, or pasta of your choice
1/3 cup parm cheese, 1 tbsp Olive oil, 2 tbsp Butter, unsalted, 2 tbsp Parsley, 1 tsp Red crushed peppers, 1 tbsp Dried basil,1 tbsp Dried Oregano
●In a large pot of boiling salted water, cook the pasta until al dente, about 7 minutes or follow the directions on the box. Drain well, return to the pot or bowl and toss fully coating with olive oil, butter and dried herbs. Serve by planting up with sauce on top of the pasta or you can mix the pasta into the sauce and serve with extra parm.
