Let’s make One Pan Brownie Baked Oats☀️ This Healthy Breakfast Meal Prep Recipe saves so much time!🤩 Make this on Sunday, for example, and then you’ll have a ready breakfast waiting in the fridge for the week! You can heat it up in the microwave before serving or you can also enjoy it cold! The recipe is gluten-free, dairy-free & high-protein! Such an easy and delicious breakfast idea! It tastes like having brownies for breakfast😋
Ingredients:
2 mashed bananas
3 eggs
1/4 cup peanut butter (60 ml) (I use a smooth pb that is 100% made of peanuts)
3 tablespoons maple syrup or honey (add more if you want to make it extra sweet)
2 cups almond milk (480 ml) (you can add more if you’re using a thicker peanut butter)
1 cup gluten-free oats or buckwheat flakes (240 ml)
1/2 cup vegan chocolate protein powder (120 ml)
1/3 cup cacao powder, to taste (80 ml)
1 tablespoon baking powder
Toppings:
dark chocolate chips (I used 80% dark chocolate)
sliced strawberries, to taste
1. Mix the mashed bananas, eggs, peanut butter and maple syrup together
2. Add the oats/buckwheat flakes, protein powder, cacao powder, almond milk and baking powder and stir until combined
3. Add the chocolate chips and sliced strawberries on top
4. Bake at 180 Celsius degrees (350 in Fahrenheit) for about 40 minutes
5. Cut into pieces and enjoy!
6. Store in the fridge!
