My recipe for classic barbecue baked beans is super easy; mostly because the slow cooker does all the work. I tested this recipe many times, and I found that the best way to get the beans tender enough is cooking them for a full three hours. There should be about a cup of water left in the pot and that’s when you know it is time to add the sauce. I love a side of baked beans with a big old hearty sandwich. Try serving these with my flat iron steak sandwich or by healthy slow cooker pulled pork.
Slow-Cooked Baked Beans
Ingredients:
3/4 lb thick-cut bacon, diced
1 large onion, diced
1 lb dried pinto beans
5 cups water
3/4 cup unsulfured molasses
1/2 cup ketchup
1/4 cup yellow mustard
1 tsp salt
1 tsp black pepper
Preparation:
Cook the bacon over medium heat in a medium-size skillet. When the bacon begins to brown, add the onions and sauté until translucent.
Place the beans into the slow cooker with the water, bacon, and onion. Cover and set the slow cooker on high for 3 hours.
Meanwhile, prepare the sauce. Combine the molasses, ketchup, mustard, salt, and pepper in a small bowl. Set aside.
After 3 hours add the sauce and stir to combine. Cover and let the beans cook an additional hour.
