This video will show you how to update the metadata on an NFT that has already been minted to the blockchain. As long as you have the policy keys and its not locked, you can update the metadata even if you don't own the asset.

Metadata lives on the blockchain forever, but in Cardano the metadata standard requires that the most recent minting transaction for a given asset determines its canonical metadata. Now, in order to override the metadata of an existing NFT (even one that is not in your wallet) you need to mint an identical one with the same asset name and then burn it.
