This Cake is for someone who loves chocolate malted milk flavor.
I have some malted milk powder around that I needed to use before the expiring date. So I came up with this cake recipe.
Ingredients: Cake
1 stick (1/2 cup) unsalted butter, softened
1 cup sugar
2 large eggs
1 tsp vanilla extract
1 cup buttermilk
1-1/2 cups all-purpose flour
1/2 cup malted milk powder
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
Ingredients: Chocolate ganache
1 cup milk chocolate
1/2 cup heavy whipping cream
Ingredients: Frosting
2 sticks (1 cup) unsalted butter, softened
3 cups powdered sugar, more or less
1/4 cup malted milk powder
1-2 tbsp heavy cream or milk
1/2 tsp vanilla
A pinch of salt, optional
1 box Whoppers malted milk balls candy for filling and topping, crushed 1/2 of the balls for the filling.
Method:
Making cake:
1. Cream butter and sugar until light and fluffy with a hand mixer for about 3-5 minutes.
2. Add eggs and vanilla, and mix well. Then add buttermilk. Mix well.
3. Sift in all-purpose flour, malted milk powder, baking powder, baking soda, and salt into the wet mixture. Mix just until combined.
4. Divide the batter into two - 8" round pans, lined with parchment paper on the bottom, and greased the side of the pan with baking spray.
5. Bake at 350 deg. F for 20-28 minutes or until a toothpick inserted comes out clean. Let cool completely on a wire rack after inverting the cake out of the pan.
6. Wrap the cake with plastic wrap and place them in a freezer bag. Keep them in the freezer until needed.
7. Make chocolate ganache by heating heavy whipping cream in the microwave for 30 minutes or more or until very hot. Then pour the hot cream over the chopped chocolate, and stir until the chocolate melted. Let cool to room temperature and then keep it in the fridge.
8. Make frosting by creaming butter until light and fluffy for about 5 minutes. Then add malted milk powder and powdered sugar, 1 cup at a time.
9. Add vanilla and cream as needed to make the frosting pipable. Add a pinch of salt if wanted.
How to assemble the cake.
1. Whip the chocolate ganache until thick and spreadable, and set aside.
2. Place a piece of thawed cake on a cake board. Spread the whipped chocolate ganache. You may pipe a ring around the edges with the prepared frosting if wanted.
3. Sprinkle with crushed malted milk balls. Then top with more chocolate ganache.
4. Layer another piece of the cake on top and frost the entire cake with the frosting. (You can do a crumb coat and refrigerate it before frosting the second layer.)
5. Spread chocolate ganache on top and pipe some rosettes around the edges and decorate the bottom as wanted.
6. Add some Malted chocolate milk balls on top of the chocolate ganache. Enjoy!
