Most of the time, the simple things in life are the best. This cake is a prime example: layers of meringue, pudding, & whipped cream consisting of ingredients you probably already have at home. Try this heaven in a bite & let me know how it went!

9 eggs - separate whites & yolks.
Meringue:
Beat egg whites to soft peaks (about 5 minutes on high). Slowly add 1.75 cups sugar (I use bakers sugar - it’s super fine & works great for meringues). Beat to stiff peaks. Add 2 Tbs white vinegar & 1 Tbs cornstarch. Beat another minute. Spread over 9x13” pan lined with parchment paper (don’t spread to edges, should be about 1.5” left all around edges). Bake at 300 F 15 minutes. Lower to 200. Bake another 1.5 hours.
Filling:
In a large pot, mix yolks with 1/2 cup sugar on high about 3 minutes. Put on stove & turn heat to medium. Add 1.5 cups warm milk & 3 Tbs cornstarch. Mix on low speed/whisk about 10 minutes or until slightly thickened. Turn heat off. Incorporate 3/4 cup unsalted butter. Let cool about 10 minutes. Separate about 1/3 of the filling & fold in 3/4 cup finely chopped walnuts to it. Let the filling cool to room temperature (cover with plastic wrap, making sure plastic wrap touches the filling).
Whipped Cream:
Make whipped cream. I use the vanilla “slag krema” packets & follow instructions to save time. Depending what I have, I sometimes also make a stabilized whipped cream. For that, add 1 pint heavy whipping cream, 2 Tbs powdered vanilla pudding mix, 4 Tbs bakers sugar. Mix until stiff peaks form.
