Ingredients:
- 7 cups SR Flour
- 7 cups Chapatti flour
- 1 tbsp Dried yeast
- Salt to taste
- Water as needed
- 3 tbsp Ghee
- 500mlL oil or as needed
Instructions:
1. To make the dough simply combine all the dry ingredients then slowly add the water till a dough starts to form.
2. Once a dough begins to form, transfer the dough to a kitchen bench and continue to knead for around 10 minutes till a soft consistency is formed.
3. Allow the dough to rest in a warm place for 20 minutes.
4. Once rested, divide the dough and shape into medium sized balls.
5. Cover the dough with a tea towel to avoid them drying out.
6. In jug combine the ghee and oil.
7. Take one dough ball at a time and roll it out then brush with the ghee and oil mixture, sprinkle some flour on top then fold a 1/3 of the dough to the centre then repeat the process and fold again.
8. Repeat this with the rest of the dough.
9. Next get a large frying pan or tawa ready to cook the bread by putting on a medium heat and brushing some oil on the surface.
10. Carefully roll out the folded bread one at a time and then cook on the pan, brushing each side of the bread with the oil mixture.
11. Enjoy this Yemeni bread with a cup of warm tea and honey !
