A famous North-Indian delight, this Ram Laddoo is a must-try along with radish and spicy green chilli chutney.
RAM LADDOO
Ingredients
1 cup split skinless green grams (moong dal), soaked for 1-2 hours and drained
¼ cup Bengal grams (chana dal), soaked for 1-2 hours and drained
1 inch ginger, finely chopped
1 tsp cumin seeds
2-3 green chillies, finely chopped
1 tsp freshly chopped coriander leaves
½ tsp Tata Sampann Red Chilli Powder
Salt to taste
1 tbsp chopped white radish greens
Oil for deep frying
2 medium white radishes, grated and squeezed
Thinly sliced white radish for garnish
Chutney
2 large white radish greens, finely chopped
¼ cup freshly chopped coriander leaves
2-3 green chillies, chopped
Salt to taste
2 tsps lemon juice
Method
1. In a blender jar, add moong dal, chana dal and ginger, cumin seeds, green chillies, chopped coriander and Tata Sampann Red Chilli Powder. Add 2-3 tbsps water and blend to a coarse paste.
2. Transfer the prepared paste into a large bowl, beat the mixture in the same direction for 10 minutes using hand. Add salt, radish greens finely chopped and lightly fold the mixture.
3. Heat sufficient oil in a kadai on medium heat, drop in small portions of the dough into the hot oil using hands and deep fry on medium heat till golden and crisp. Drain on an absorbent paper.
4. For the chutney, add white radish greens, chopped coriander, green chillies and salt in a blender jar. Add a little water and lemon juice. Blend to a smooth mixture.
5. For serving, transfer the ram laddoos on a serving plate, sprinkle chaat masala, roasted cumin powder, drizzle the prepared chutney, grated and squeezed white radish, and sprinkle chaat masala on top.
6. Garnish with thinly sliced radish and serve immediately.
