These are the best peach dumplings ever and they are super easy to make!!

Dairy-Free Peach Dumplings
Ingredients:
Frozen peach slices: 16
Dairy-free butter (e.g., Earth Balance): ¾ cup
Pillsbury croissant rolls: two 8 oz cans
Granulated sugar: 1 1/4 cups (about 250 grams)
Vanilla extract: 2 teaspoons
Sprite or similar lemon-lime soda: Approximately 3/4 can
Ground cinnamon: To taste
Powdered sugar (optional)
Dairy-free whipped cream (optional)
Instructions:
1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
2. Grease a baking pan or dish.
3. Take frozen peach slices and wrap each one in a Pillsbury croissant roll.
4. In a bowl, combine granulated sugar and vanilla extract. Stir briefly to incorporate the vanilla.
5. Melt dairy-free butter and pour it over the peach-filled croissant rolls.
6. Sprinkle the sugar mixture evenly over the butter-coated dumplings.
7. Pour approximately 3/4 of a can of Sprite or similar lemon-lime soda around the edges and in the middle of the pan.
8. Sprinkle ground cinnamon over the top of the dumplings according to your preference.
9. Place the pan in the preheated oven and bake for 40 minutes or until the dumplings are golden brown and bubbly.
10. Once baked, remove the peach dumplings from the oven.
11. Optionally, dust the dumplings with powdered sugar and serve with dairy-free whipped cream.
