Hello everyone, so today I wanted to share with u all one of the most famous Lebanese finger food recipes, called Kibbeh.
I made 3 times the amount, I will post the recipe for one meal.
Kibbeh recipe
For the Shell:
1pc Flank steak (processed into a paste in food processor)
1 small onion (process with last batch of meat in food processor)
Bulgur Wheat #1 ( for each lb of meat, 2 cups of bulgur washed)
2 tbsp red pepper paste
Ice cold water
Salt to taste
Filling:
1lb ground beef
2 medium onions chopped
Salt to taste
1 tsp black pepper
1/2 tbsp paprika
1 tsp all spice
2 tsp cinnamon
Make the filling, brown ground beef, add onion, spices and right before you turn the heat off, add cinnamon, put aside to cool down.
Knead together the processed flank steak and the soaked bulgur wheat adding iced cold water to make a soft pliable dough
consistency. Take small piece size of ping pong and lightly wet your finger and palm, follow the direction on the video on how to make a well to stuff the filling, then close the ends.
To serve same day, fry in hot oil until golden brown. To preserve in freezer, drop the kibbeh in boiling water for 1 min until changes colour then remove and let cool completely before packing in freezer bags.
