Here we take a look at a Roland TD-25

The issue that I am having is that the Hi-Hat isnt calibrated so it sometimes sounds like you hit it twice.

For example just touching it will double hi-hat. In this video we take a look into how the calibration process is to make sure that your Hi-Hat works Properly.
