I recently made these really cool Paddington Bear themed cookies for my nieces birthday party, and thought I would share them with you guys. Don't worry if you don't love marmalade quite as much as Paddington , these cookies don't actually taste of marmalade, just delicious ginger biscuits/cookies, which I've included the recipe for below the list of equipment I used 😁 Which characters from your childhood would you like to see as a cookie theme?

Ginger Biscuit/Cookie Recipe:
350g Plain Four (All-Purpose)
1tsp Bicarbonate of Soda (Baking Soda)
2tsp Ground Ginger
100g Butter
175g Soft Light Brown Sugar
1 Large Egg
4tbsp Golden Syrup (Corn Syrup)
Sift the flour, bicarbonate of soda and ginger into a large bowl. Add the butter and rub in with your fingertips until you have a mixture resembling breadcrumbs. Add the sugar and give a good mix.
In a separate bowl, beat an egg and golden syrup together. Add to the flour mix and mix well. Once into a dough wrap in cling film and leave to chill for at least 30 minutes.
Pre heat oven to 190°C/375°F/Gas Mark 5 and line to baking trays.
Roll the dough out on a lightly floured surface to a thickness of about 4mm/ 1/4 inch. Cut out shapes and place them slightly apart on your lined baking tray. Bake for around 8 minutes until golden brown. Leave to cool on a wire rack.
