I add salt and pepper to the meat.

I add milk
I add some hot pepper juice. Special pepper juice from Adana city.
I leave the meat to marinate like this for 1 day.
I place the meat on a doner kebab stick.
I cook the kebab horizontally over a wood fire.
I insert a steel skewer and cut it with a knife.
I cook it some more on the grill and serve it.
