Servings: 30-40 chips
Ingredients:
• 1 medium Zucchini
• 3 tbs Grated Parmesan
• 1/2 tsp Italian Seasoning
• 1/2 tbs Garlic Powder
• 1/2 tsp Paprika
• Avocado Oil
• Sea Salt
• Black Pepper
Instructions:
1. Preheat your oven to 425°.
2. Line a baking sheet with a few paper towels.
3. Slice your zucchini thinly (like a chip). If you have a mandolin slicer, set it to 1.55mm.
4. Place your zucchini slices evenly onto your baking sheet, and season them with salt (to taste). And let them sit for 10 minutes. This allows them to dry out.
5. Next, pat your slices dry, and add them to a bowl, drizzle with olive oil, and toss to evenly coat each slice.
6. In a separate bowl, mix your parmesan, Italian seasoning, paprika, and garlic powder, and pepper (to taste).
7. Add the mixture to your zucchini slices, and mix so they are well coated.
8. Line your baking sheet with parchment paper, and place your slices in rows.
9. Bake them for 15-20 minutes until crispy.
10. When they’re ready, grab a plate and place a paper towel on it. Transfer your zucchini chips to the plate and let them cool, et voilà!
