How to make a super fluffy Lemon Cream Cheese Bread.
Here's what you'll need:
Lemon Cream Cheese Filling:
1/2 cup softened cream cheese (120g)
1 tbsp sugar (15g)
1 tsp lemon zest
1 tbsp lemon juice
Dough:
1/2 cup milk (125ml)
1 egg
2 tbsp sugar (30g)
1 tsp instant yeast (3g)
2 cups bread flour (250g) or all purpose flour
1/2 tsp salt (3g)
3 tbsp unsalted butter (36g)
1. For Lemon Cream Cheese Filling: In a bowl, mix together, softened cream cheese, sugar, lemon zest and lemon juice. Continue mixing until smooth then set aside for later.
2. In a large mixing bowl, mix together milk, egg, sugar and instant yeast then add bread flour. Mix until incorporated. Then add salt and butter. Mix until butter is fully absorbed. Knead until smooth. around 5 minutes. Slap and fold method is better.
3. Smooth dough into a ball. Cover for an hour or until doubled in size.
4. Punch air out. Transfer to a floured counter. Divide into 8 equal pieces. Smooth each dough ball. Bench rest for 10 to 15 minutes.
5. Roll and flatten out each dough ball. Place prepared filling. Cut some vertical lines, please see video for reference. Roll tightly.
6. Brush a mini loaf tin with butter. Place prepared bread dough. Cover for 30 minutes. Preheat oven at 170C/340F for 15 minutes.
7. Bake for 20 minutes or until light golded.
8. Brush with melted butter.
9. Serve and enjoy!
