Pork shoulders is a very forgiving meat and it’s hard to mess up. Once pulled, you will have a ton of options. Pulled pork is very versatile and what you do with leftovers can sometimes be better than your main dish. Smoking a pork shoulder is a long process, so you will want to prep everything a day before and wake up super early. Expect it to take an hour per pound so if you want a shorter cook, buy a smaller pork shoulder(4-7lbs)

- Pork Shoulder 7-8lbs, for shorter cooks go smaller, for bigger crowd go bigger but keep in mind it'll take longer to cook
