Mandarin Orange Cake
1 Yellow Cake Mix
20 to 22-ounce Can Mandarin Oranges, UNDRAINED
2 Egg Whites
1/4 cup Water
Mix together and pour into a 9 x 13 x 2-inch buttered pan. Bake at 325 degrees F for 45 minutes or until at toothpick inserted in the middle comes out clean. Can also be made in 3 round cake pans. Bake the round pans for 20 minutes. Let cakes cool completely before frosting.
FROSTING:
20-ounce can Crushed Pineapple, UNDRAINED
3-ounce package French Vanilla or Vanilla Instant Pudding
16-ounces Whipped Topping (Cool Whip)
Mix the crushed pineapple and pudding mix together well. Stir in cool whip. Spread on top of cake .
This make a lot of frosting to accommodate the 3-layered cake. There will be extra with the pan cake so just have any extra fruit on hand and use it as a fruit dip. Enjoy with family or friends alike. It does need to be kept in the refrigerator which makes it a cool summertime dessert.
