It’s tomato season which means you’re hopefully eating them out of hand like apples with a little salt, but when you’re bored of that (?), it’s time for a tomato tart. This one, with a peppery, cheesy, Cheez-it-like press-in crust, should be overflowing with every kind of tomato you can find (no pre-roasting or pre-salting needed). When the proportions are right and it’s done well, it will be perfect every time: transportable, snackable, sliceable—honestly, what can’t this tomato tart do? Even if your tomatoes are average to mediocre (I lucked out with some solid A- tomatoes here), in this tart, they will emerge perfect. Chefs kiss!
