In honor of Lynja (@cookingwithlynja), I'm making her saucy butternut squash mac and cheese. RIP Lynja.
✨Recipe:
✨ Remove the seeds to butternut squash, poke holes, and place on a baking sheet for oven (salt and pepper). Bake at 400 for 25-45 minutes (until it's soft).
✨ Cook your rotini noodles according to package.
✨ Scrape out insides, and place in a blender with 1 1/2 cup milk and spices: 1tsp smoked paprika, 1tbls garlic powder, 1tsp ground thyme, 1tsp cayenne pepper, salt & pepper
✨ Pour the blend into a pot and cook until it bubbles, add in cooked pasta, and cheeses: sharp cheddar, parmesan, Monterey jack.
✨ Serve warm and enjoy 😀
