Kariku Payasam || Elaneer Payasam|| Tender Coconut Payasam || Onam Special
Ingredients
• Tender Coconut Pulp– 1 cup
• Tender Coconut water-1 ½ cup
• Milk – 2cups
• Condensed milk-3 tbsp
• Cashews – 2 tbsp
• Cardamom Powder – ¼ tsp
Direction
• Collect tender coconut water from fresh tender coconut and gently scoop the pulp.
• Take a blender,add half of coconut pulp and pour tender coconut water.Blend well and keep aside.
• Chop well remaining coconut pulp.
• Heat heavy bottomed pan and pour milk and blended coconut mix.
• Stir well and boil it for 5 mins on a medium flame.
• Add condensed milk, chopped coconut pulp, chopped cashews and cardamom powder.
• Combine well and cook for 3 mins on low flame.
• Add sugar if required.
• Off the flame and garnish with pistachio/roasted cashews.
• Serve chilled.
