I am working with two whole chickens that are about 5.5lbs each. To spatchcock a chicken it is very easy, but its important to have a good sturdy pair of scissors. We are going to simply cut the back out of the chicken, break the breast bone, and flatten the chicken.
Simple enough!
Now we are going to season. You can use your favorite chicken rubs, but I chose to use the Sucklebusters Texas Pecan BBQ Rub... and let me tell you what... it was DELICIOUS!!
To ensure that the chicken breasts are nice and moist, I stuffed seasoned butter in between the skin and the breasts. This made for super juicy and tender results. I would recommend that you don't skip this step. Instead of butter you could also use some olive oil and herbs.
We are going to smoke this chicken on my Camp Chef SmokePro SG24 Wifi at 285F. Chicken this size will take around 2 hours, but be sure that you are reading 165F internal temperature in the breasts before removing from the grill.
Now just because I used my Camp Chef, that doesn't mean that you cannot use whatever grill it is that you have: Masterbuilt Gravity Series, Traeger, Yoder Smoker, Weber Smokefire, etc. Any grill or pellet smoker with temperature control will work.
