I consider this Chilli Con Carne a staple in my house. Great to freeze and have another time. In fact this dish gets better and better at least a day later after the spices have truly infused the meat. Try this and I am sure this will be a regular spicy treat. Al

For an even more intense version I've tweaked the ingredients list further.
SERVES 6
2 tbsp olive oil
2 onions, chopped
2 garlic cloves, crushed
1kg lean beef mince
250ml red wine
2 x 400g cans chopped tomatoes
3 tbsp tomato purée
2 red chillies, thinly sliced, or 3-4 tsp dried chilli flakes
1.5 tbsp ground cumin
1 tsp ground coriander
1 stick cinnamon
Good shake of Worcestershire sauce
3 Knorr chicken stock cubes and 1 Oxo cube
Salt and freshly ground black pepper
2 x 400g can red kidney beans, rinsed and drained
1 large bunch coriander leaves, roughly choppe.
Add half mug of water while cooking to loosten mixture is too thick.
Feel free to add some diced red and green bell peppers as well as some fresh green chillies for extra heat. You can even experiment with a single cube of dark chocolate which I hear is a good subtle addition.
