*Old-fashioned Cake with Raisins* ✨
_Ingredients:_
Raisins 320 g
Flour 320 g
Butter 220 g
Sugar 220 g
Eggs 4 pcs
Baking powder 1 tsp
Vanilla extract 1 tsp
Salt ½ tsp
+ Powdered sugar for decoration
🔷 *Step 1.*
In a large bowl, pour boiling water over 320 g of washed raisins and let them soak for 15 minutes to soften. Meanwhile, sift 320 g of flour, 1 teaspoon of baking powder, and ½ teaspoon of salt into another bowl and mix thoroughly. LDrain the raisins using a sieve, then add them to the flour mixture. Mix everything together to coat the raisins evenly.
🔷 *Step 2.*
In a deep bowl, beat 220 g of softened butter for about 5–7 minutes until creamy and smooth. Gradually add 220 g (1 cup) of sugar while beating, and continue for another 5–7 minutes until the mixture becomes light, fluffy, and increases in volume.

In a separate bowl, lightly beat 4 room-temperature eggs with 1 teaspoon of vanilla extract until smooth. Gradually add the egg mixture to the sugar-butter mixture, beating continuously. The mixture should become fluffy. If it starts to separate, don't worry - this is normal. This may happen because of the eggs and butter combining, but it will resolve once the flour is added. Continue beating until well combined. Then, gradually add the flour and raisins to the batter, folding gently with a spatula until just incorporated.

Grease the baking pan with vegetable oil and line it with parchment paper. Transfer the dough into the pan and smooth the surface. Create a shallow furrow in the center of the batter so that, as the cake rises in the oven, it bakes evenly with a centered top. Bake in a preheated oven at 180°C (360°F) for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool slightly in the pan for about 10–15 minutes. Carefully transfer the cake to a wire rack to cool completely. Once cooled, use a fine sieve to dust the top evenly with powdered sugar for a beautiful finish.
