☆ 60g Matured Levain
☆ 250g Taiwan Black Bear BreadFlours

SPAtula mix and rest 30mins

Perform 5 sets of RollingCoils with 30min rest in between sets.
After the 5th RollingCoil, Rest the dough for 45 minutes.

8:00 Preheat Oven to maximum heat
8:40 Out of Freezer n Score
8:43 Bake for 25mins at 250°C with a BakingTray as a top cover and spray lots of H20. Then bake for another 15mins at 250°C without BakingTray.
