In this video, I share how I made this fresh and easy salad at home. Traditionally, served with prawn chips! It was my first time making it and trying it.
(Edit: Since posting this video, I have learned that this is not the most authentic way to make the peanut sauce, however, I found this version to be delicious. Next time I make this recipe, I cannot wait to try it in a more traditional way by adding palm sugar and taking out the curry paste.)
Here's what you need to recreate my version of Gado Gado:
For the simplified peanut sauce (non-traditional) -
- 1 cup unsalted roasted peanuts
- 1/2 cup coconut milk
- 4 tsp Thai red curry paste (Edit: Normally, this ingredient is not part of the peanut sauce)
- 3 tsp Kecap Manis (Indonesian soy sauce)
- 1 tsp Sambal Oelek (Indonesian red chilli paste)
- 2 tsp garlic salt
- Juice of 1/2 lime
- 1/3 cup water
For the vegetables -
- 2 potatoes
- 1 cup bean sprouts
- 2 cups spinach
- 1/2 cucumber
For the protein -
- 2 eggs
- 8 strips of tempeh
For the garnish -
- 2 Thai bird's eye chilis
- 2 tbsp chopped peanuts
- 20+ prawn crackers
