3 slices of young ginger
9 prawn or shrimp heads (from medium to large-sized prawns or shrimp)
800ml (27.05 fl oz) water
1 chicken stock cube
0.5 tsp salt
0.5 tsp sugar
Marinated Sliced Pork

80g (2.82 oz) lean pork loin, sliced thinly
A few dashes white pepper
0.5 tbsp light soy sauce
0.5 tbsp cornflour / cornstarch
Fried Flat Rice Noodles

500g (17.6 oz) flat rice noodles
1 tbsp light soy sauce
2 tbsps premium dark soy sauce
Other Ingredients

3 cloves garlic, chopped
9 mid-large prawns, deveined and deshelled (170g (6oz without shell, 270g (9.5 oz) with shell and heads intact)
90g (3.17 oz) fish cake, sliced (add more if desired)
A handful of choy sum
Some cornstarch solution
