150g (5.3oz) coconut oil or the same amount of butter, melted
4 large eggs at room temperature or 4 tablespoons of flax seeds, ground
150g (5.3oz) granulated sugar or the same amount of your favourite sweetener
144g (5.07oz) almond flour
67g (2.36oz) desiccated coconut
25g (0.88oz) almond slices
Zest of one lemon
1g (1/4 teaspoon) fine sea salt
5g (1 teaspoon) baking powder
5g (1 teaspoon) pure vanilla extract
15g (1 tablespoon) freshly squeezed lemon juice
Bake at 355F (180C) for 40 minutes
